Ingredients

325g/12ozs Self Raising Flour
275g/10ozs Caster Sugar
275g/10ozs Soft Margarine/Butter
5 Eggs
45ml/3 Tablespoons Milk
Few drops of Vanilla Essence/Extract
2 tbsp Milk

Preheat oven to 300F/150C/Gas Mark 2
Grease and Line an 8"/20cms Square cake tin with a double layer of Greaseproof Paper

Method

  1. Sift the flour into the mixing bowl and add all the ingredients.  Bind all the ingredients together, carefully, using a slow setting on your mixer. Once the ingredients have been combined increase the speed and beat for 1 minute.
  2. Spoon the mixture into the prepared baking tin and smooth on top.
  3. Cook in the centre of the oven for approx 1 and half hours.
  4. Test the cake by lighly pressing the centre.  it should spring back and the top should be golden brown, insert a skewer.  If it comes our clean, the cake is cooked.
  5. Leave in the tin for 5 mins and then turn our onto a cool wire tray
